After an extensive remodel of the former Bentley’s space, to introduce a modern feel while retaining the charm and character of the iconic Wheeler Opera House, the highly anticipated Justice Snow’s has opened its doors. A food lover’s dream, the eatery offers more than just a beautiful redesign. From a menu by owners Michele Kiley, Marco Chingolani, and chef Jonathan Leichliter, dishes are prepared with local produce and include lamb meatballs with arugula, devilish eggs, the best house-made tempura fried pickle spears this side of the Mississippi, and a sustainable Colorado rainbow trout entrée.
And while the food is remarkable, the bar and the cocktails are what set Justice Snow’s apart. The artisan menu created by libation liaison and cocktail mechanic Joshua Peter Smith features 65 original cocktails and a few non-alcoholic ones. But if you are searching for a drink that is truly unique, let Smith create a custom cocktail based on your personal profile—your favorite color, a childhood memory, or the meaning of your name.
